With Halloween over, many are excited for the upcoming Thanksgiving break. Not only do students have a week off of school, but they may celebrate Thanksgiving by spending time with family, eating lots of food, and whatever other Thanksgiving traditions they have. Thanksgiving and Halloween both represent the fall, and when the weather starts to get colder, and the semester inches farther toward an end, spirits are high. There are many ways to get into the fall spirit, such as decorating and finding fall snacks. Starbucks, for example, just stopped their fall menu, consisting of items like the pumpkin loaf, and the pumpkin spice latte, and have now moved onto their Christmas menu, with the sugar cookie oat latte, the Caramel Brûlée Latte, the peppermint cake pop, and more. “I haven’t tried much of their fall menu, but I’m a big fan of their Christmas menu! I have so far tried most of the drinks and I think the Caramel Brûlée Latee is my favorite.” says Evangelia Hackett (24′). Now although Starbucks has decided it is time for Christmas and winter, you can still have fun with the fall, as Thanksgiving hasn’t even happened yet! One recipe for chai cookies is right up the alley of current snack favorites, considering all the chai drinks people are currently loving this season. Something cool about this specific recipe is that it is known all over the internet to be “Taylor Swift’s recipe.” “All I had to do was look up “Taylor Swift chai cookie recipe” online and a million different versions of the recipe came up.” says Evangelia (12). These cookies are so easy to make, you can even try if you have never baked in your life. “I have been seeing these cookies all over the internet and everyone was baking them because it’s Taylor Swift’s famous recipe, so I decided it would be fun to try, especially during fall because chai seems very festive.” says Evangelia (24′). For the cookies:
★ ½ cup unsalted butter, softened
★ ½ cup vegetable oil
★ ½ cup granulated sugar, plus more sugaring for tops
★ ½ cup powdered sugar
★ 1 large egg
★ 2 teaspoons vanilla extract
★ 1 chai tea bag
★ 2 cups flour
★ ½ teaspoon baking soda
★ ¼ teaspoon salt
For the glaze:
★ 1 & ½ cups powdered sugar
★ ¼ teaspoon nutmeg
★ ¼ teaspoon cinnamon
★ 2 tablespoons milk or eggnog
As for directions, you’ll want to preheat your oven to 350 degrees °F, then cream the butter in a mixing bowl and mix in oil. Next you add in sugar, powdered sugar, eggs, and vanilla extract, then mix. You then cut open the chai tea bag and mix those leaves into your bowl. Mix in the dry ingredients, and then put the bowl in the fridge for at least an hour. Sprinkle the tops of the cookies with sugar before baking and bake for 8-12 minutes. Once the cookies are baked and cooled, pour on your glaze. Making the glaze is simple, you just whisk all the ingredients together and let the glaze set on your cookies before you eat them.
