Brown Sugar Oatmeal Cookies Recipe

September 22 was the first official day of the 2022 fall season. What better way to celebrate than by making some delicious oatmeal cookies! 

 

Ingredients:

One cup soft unsalted butter one and a half cup dark brown sugar 2 teaspoons vanilla extract two whole eggs one and a half cup all purpose flour 1 teaspoon salt half teaspoon baking soda 3 cups old-fashioned oats

 

  1. Preheat oven to 350°F
  2. Beat together the butter and sugar until fluffy. An electric mixer is preferable, but this can also be done by hand. 
  3. Incorporate the vanilla and eggs one at a time. 
  4. Mix together the flour, salt and baking soda in a separate bowl. Then add it to the creamed mixture. 
  5. Mix in the oats. 
  6. Make roughly 24 scoops of mixture and lay them out on a buttered parchment lined cookie sheet. 
  7. You can leave them rounder if you like thicker, chewy cookies, or you can flatten them out to get crispier cookies. 
  8. Bake for 12 to 13 minutes or slightly longer if you want them a little crispier. 

 

This recipe is an easy and fun way for students to get in the autumn spirit. These cookies are the perfect snack to enjoy with a glass of milk or a cup of tea. If you want, you can include additional ingredients to your cookies like nuts, chocolate chips, pumpkin spice, cinnamon, etc..

And she is absolutely right, for many, these cookies are like a step back into your past. One bite, and you get full the immersion into warm nostalgia that the autumn season deserves.
