o 1/2 cup of water lukewarm
o 1/2 cup of sugar white
o 1/2 cup of milk scaled
o 1/3 cup of butter melted
o 1 egg
o 1 teaspoon of salt
o 4 cups of flour
For the filling:
o 6 tablespoons butter melted, divided
o 5 granny smith apples peeled, cored, and diced
o ½ cup of sugar white
o 1 cup of brown sugar
o 2 tablespoons of ground cinnamon
o ½ teaspoon apple pie spice optional
For the icing:
o ¼ cup of cream cheese softened
o 4 tablespoons butter unsalted, softened
o 1 ½ cups of powdered sugar
o ½ teaspoons of vanilla extract
o ¼ teaspoon of salt
o ¼ cup of milk as needed
Instructions:
1. In a small bowl add yeast and 2 tablespoons of sugar into the lukewarm water. Let it sit until dissolved (10 minutes).
2. In the mixing bowl of a stand mixer add scaled milk, melted butter, egg, remaining sugar, and salt. Mix on low until combined
3. Add half of the flower mix until batter is smooth. Add yeast mixture continuing to mix on low. Slowly add the rest of the flour until fully mixed. Remove dough and knead on floured surface (5 minutes).
4. Remove dough, place into greased pan, cover, set aside. Let it rise until it is double the size (1.5 hours)
5. While dough is rising, make filling. Heat up 4 tablespoons of butter and white sugar in a large skillet, then add apples. Sauté until apples are slightly caramelized. Remove from heat and strain. Leave in strainer until they are used.
6. When dough rises, remove cover, using fist punch the dough down and remove from bowl. Roll out on a well-floured surface into a 16×24 in. rectangle and spread the remaining 2 tablespoons of melted butter almost out to the edges. Mix the brown sugar with the cinnamon and apple pie spice and sprinkle evenly across the butter. Spread apple pie mixture all over the brown sugar.
7. Roll into a log, lengthwise. Using a knife, gently cut 2 inch slices to give you 12 cinnamon rolls.
8. Grease a 9×13 baking pan and arrange cinnamon rolls so they are slightly touching, Cover pan with plastic wrap and let the cinnamon rolls rise until the dough is doubled (30 minutes-1 hour).
9. Preheat oven to 375 degrees. Bake for 20-22 minutes or until the tops of the cinnamon rolls are golden brown.
10. While the cinnamon rolls are baking, start working on the icing. Mix cream cheese, butter, powdered sugar, vanilla, and salt together on medium speed. Slowly add milk to the mixture ( a couple tablespoons at a time until desired thickness is reached).
11. When cinnamon rolls come out of the oven, let them cool down for 10 minutes. Pour the icing over top and spread over the rolls. Serve warm.
